Week 2 Day 8 #stayhome #staysafe

Day 8 and I’m getting a little more creative with my ideas for meals :) #breakfast was the infamous #kejriwal toast, #lunch was bhindi, dal and rotis and #dinner was chicken koobideh kebabs with Persian rice. Please ignore the funny shaped koobidehs, they tasted excellent but I'm yet to get the shape perfected.



BREAKFAST- KEJRIWAL TOAST

The first thing I would like to do is boast about my perfectly shaped sunny side up in the picture below:) I studied in Mumbai, India and #Willingdon Club is one of my favorite sports clubs in Mumbai and there hasn't been a single time that I've visited this cluba and not ordered this super simple but extremely delicious dish. This dish was created and made to perfection at this club and was one of Mr.Devi Prasad Kejriwal's favorite dishes (thus the name of the dish). All you need is bread, cheese, chilies and an egg to put this together!


LUNCH- A SIMPLE VEG MEAL

On days I plan a heavy dinner, I always ensure we have a light lunch. Day 8 was a simple bhindi (okra) masala with a tangy dal (lentils curry) and leftover potato salad from the previous night. I basically used my normal dal recipe (you can find the details in my "recipes on demand" tab of the blog), but added in some tamarind to give it a slight tangy taste.


DINNER- CHICKEN KOOBIDEH KEBABS

My husband and I LOVE Persian food, so this is a meal we could have nearly every single day (without the rice of course). It's so simple to make and is a refreshing change to the normal chicken mince dishes.

I have shared this recipe earlier on my blog, so you can find it in the recipes on demand section. However, I didn't use any sumac but I strongly suggest you buy it and keep it handy to use for this dish as it boosts the taste a lot!
