A holiday home or a visit for a party to the Scolt house is incomplete without my mother's famous shammi tikias!

"You've got to love what you do to make it happen and I love cooking as much as I love my job, so I always find a way to make it work".
Shammi tikias need a little more patience to make than chicken and fish dishes. So, if you're having a bad day at work I suggest not to attempt this ;)
Patience is crucial while experimenting new dishes.
#shammitikias have been a staple meal for all my birthday parties at home, my school lunches and family dinners. The last time I visited home, I picked my mother's brains to share her amazing recipe with me. At first when I started making it I felt motivated but when I slowly saw the texture of my mixture I started losing hope. However, my friends- as they say "where there's a will, there's a way"! I managed to work around my overly liquid texture by improvising (a trick I will share with you in my recipes if you reach out) and managed to save my dish- proof of which is in the picture above :)
Disclaimer! I had a red eye flight followed by an extremely busy day but still managed to pull this off in time for dinner without losing patience. You've got to love what you do to make it happen and I love cooking as much as I love my job, so I always find a way to make it work :)
Plate up hot with some rotis, onions, slit green chilies, lemon wedges and you're ready to enjoy a dish that I promise you will always remember.
