Kheer or Firni (a rice pudding) is a very famous and extremely loved Indian dessert. It is usually had on auspicious days and on special occasions, but a recipe so simple can be used to make on any day for all you sweet lovers!
My husband loves this dessert and is very accustomed to having this at his home back in Mumbai and thus today I attempted to make it for him. We were extremely thrilled at the consistency of the kheer and have nearly finished the entire bowl! I hope you try out this recipe and enjoy it as much as we did. It takes all of 15 minutes to cook, so if you are in the mood to make something sweet and special, I strongly advocate this dessert!
Recipe for home made kheer
Step 1: Soak some rice in a bowl of water
Step 2: Heat some ghee in a pan and add a few cardamom pods and the drained rice. Let it fry for about 1 or 2 minutes.
Step 3: Add in milk and give it a good stir. Let it start boiling and then bring it to a medium flame.
Step 4: Once the rice softens, add in a few cashew nuts and almonds and sugar (I added about 5 spoons, you can choose your quantity based on your preference).
Step 5: Let it cool down and add a few more nuts on top and some strands of saffron.
