The menu for today was quite simple and once again it was a mix of a little vegetarian, some left overs and proteins (how can a day be complete without meat, right?).
Today's #breakfast was hot, spicy #poha with a nice cup of black coffee to start us off for the day ahead. I made a little extra to serve as a healthy snack through the day. This is so simple to make and takes barely any time. #lunch was extremely quick to put together. I used the leftover pav bhaji from the yesterday and made pav bhaji cheese grilled sandwiches for lunch today. #dinner warranted a much needed meal of meat, so I made a simple chicken kheema (chicken mince) and served it with rotis.
A tip for ensuring your day is super productive- Plan in advance!! I plan my cooking the previous night and I keep all ingredients ready in the morning so that it doesn't take me too much extra time on a work day.

BREAKFAST- POHA
Ingredients:
2 cups of poha washed well
1 tsp mustard seed
1 tsp cumin seeds
1 large onion chopped into tiny pieces
2 green chilies chopped
1/4 tsp turmeric powder
Handful on curry leaves
1 lemon
3 boiled potatoes chopped into little squares
Salt to taste
Recipe for the easiest poha:
Step 1: Heat oil in a pan and add mustard seeds, cumin seeds and let them sizzle.
Step 2: Then add in the onions and let them turn brown, followed by the green chilies and curry leaves and fry well.
Step 3: Add in the potatoes and turmeric powder and mix well.
Step 4: Add the washed poha and salt to taste and mix very well. Cover it and let it cook for 2 minutes. Keep stirring till done.
Plate up!!
Serve hot with a dash of lemon on top.
LUNCH- GRILLED PAV BHAJI CHEESE SANDWICHES
DINNER- CHICKEN KHEEMA (CHICKEN MINCE)
Ingredients:
400 gms mince chicken (wash well)
2 medium onions diced into small pieces
A handful of frozen green peas (boil them and keep aside)
1 tbsp coriander leaves
1 lemon
1 tbsp kasuri methi
1 tsp garlic paste
1 tsp ginger paste
1 tsp kashmiri red chili powder
1/4 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
Salt to taste
2 diced tomatoes or tomoato purée
2 tbsp yoghurt
1 cinnamon stick
2 cardamoms
1 clove
Recipe for a bowlful of juicy chicken mince:
Step 1: Heat oil in a pan. Add in the cardamoms, cinnamon and clove. Then add in the onions and sauté for a few minutes, followed by ginger/garlic paste and let it turn brown.
Step 2: Add in the tomato purée and yoghurt. Fry this mixture well and add in all the spice powders mentioned above in the ingredients.
Step 3: Stir this and let it cook well.
Step 4: Add in the chicken mince with salt and mix this with the tomato mixture. Add some water and cover it. Let it cook for a few minutes.
Step 5: Remove the lid and add in the coriander leaves, kasuri methi, boiled peas and lime. Stir for another 2 minutes till well done.
Plate up!!
Serve hot with some chilies, lemon and onions. This goes well with any Indian bread or even rice.
