Day 17 #stayhome #staysafe

Today was quite a hectic day, but I was extremely excited to try out two new dishes. The most satisfying feeling is to see an empty plate and that's when all the hard work feels so worth it.

Sehri- A plate of french toasts, mini omelettes, fruits, berry yoghurt, left over potato corn fritters and juice.


Iftari- A super tasty batch of sugary malpuas (thanks to my mom-in-law for her amazing recipe), rösti - https://www.soulfoodadventures.net/post/day-5-stayhome-staysafe

and chilled homemade mint lemonade. Hydrating is so essential and thus, the lemonade is extremely important. I didn't realize how extremely easy it is to make malpuas! Flour, egg, milk, sugar and vanilla essence and you're good to go!

Dinner- A plate of egg & chicken fried rice with spicy dry chili chicken.

Ingredients for egg chicken fried rice:

Cooked rice (I left it overnight)

2 eggs

1 onion peeled chopped

2 tbsps minced garlic

1 carrot chopped into tiny pieces

1 chicken breast

2 tbsps dark soya sauce (or as you desire)

Salt to taste


Recipe for egg chicken fried rice:

Step 1: Heat oil in a pan and fry the chicken pieces (add salt). Keep this aside and shred the pieces.

Step 2: Heat oil in the same pan and pour in the beaten egg and break into little pieces. Keep aside.

Step 3: Heat oil in a deep dish. Add in the minced garlic and let it splutter. Then, add in the onion and carrots. Fry this for a while.

Step 4: Then, add in the chicken, egg and rice and mix well. Pour the soya sauce and mix well. Add slat to taste if required.


Plate up!!
