Chicken Malai Tikka Kebabs

I have always been a great fan of kebabs- any type of kebabs! I will be experimenting a number of my favorite kebabs in the next days and will share the recipes with you. Kebabs are a great Iftari snack and extremely healthy as well. My oven has been playing up, so I made these on the stove and they tasted equally great, so there's nothing stopping you from experimenting with this recipe. It is so ridiculously simple. All you have to do is get your marination perfected and you will be ever grateful for these mouthwatering kebabs!


Ingredients:

500 gms boneless chicken cut into cubes

5-6 tbsps of greek yoghurt

2 tbsps of fresh cream

1 tbsp ginger/garlic paste

6-7 cashew nuts & 4-5 almonds (grind them into a paste with the yoghurt)

1 tsp garam masala powder

2 tbsps crushed kasuri methi

3 tbsps grated cheese or cheese spread (optional- I added it in :))

2 small limes (1 for garnishing and 1 for the marinade)

1 medium onion sliced

2-3 green chilies


Recipe:

Step 1: Marinate the chicken in a bowl with the following- greek yoghurt & nuts paste, juice of 1 lime, garam masala powder, crushed kasuri methi, ginger/garlic paste, cheese, fresh cream and salt to taste. Refrigerate till you are ready to fry them and serve hot. The longer it marinates, the softer and better they taste.

Step 2: Heat oil in a deep pan and while the oil is getting hot, layer up your skewers with the marinated chicken cubes.

Step 3: Place the skewers in the oil and fry on one side and cover the lid. Repeat for the other side until the kebabs are well cooked and nice and brownish. The oil splutters a lot, but this is the best alternative to an oven or grill.


Plate up!! Serve hot with onions, chilies, lemon and coriander chutney. These taste great on their own or even go fantastically with naans and rotis.
