All my friends know about my love for Thai cuisine and everytime I visit Thailand, my two staple dishes are Pad Thai and chicken basil with rice. I’ve never tried making Thai food before, which is quite a shame given it’s so simple and extremely tasty!!
Ingredients:
450 gms chicken mince (wash well)
Light soya sauce as required
1 tsp dark soya sauce
1.5 tbsps minced garlic
3/4 red chilies chopped
2 green chilies chopped
1 tsp oyster sauce
A handful of washed basil leaves
1 egg
Salt to taste
Recipe for pad krapow:
Step 1: Heat oil in a pan. Add the chilies and garlic and let it sizzle for a while.
Step 2: Add in the chicken mince and let it cook for about 3 minutes.
Step 3: Add in the sauces and salt to taste.
Step 4: Add in the basil leaves and keep them for a little under a minute. Basil leaves cook very fast.
Please note- I’ve not used sugar or fish sauce in mine because I prefer it without the two, although that’s what the authentic dish has as key ingredients.
Plate up!!
Serve this with steamed rice and a sunny side up. I love adding a drizzle of chili padi (chilies in soya sauce) to my rice. The latter however, isn’t for people who can’t tolerate spice :)
