30 Minute Kati Rolls!!!

The infamous kati rolls that originated in Kolkata are definitely a universal favorite! I have been eating #katirolls for as long as I can remember and of course I have my very favorite #Nizams restaurant to thank for the extremely tasteful experience on every occasion!


However, what do you do when you're miles away from a good kati roll and craving that juicy, spicy blend of chicken skewered kebabs and hot egg paranthas at home?


I was in Kolkata last month to visit my mother and realised how easy it's become to order rolls at home and eat it in comfort and since I was home bound, I decided to order in. However, there was something amiss- that steaming hot parantha and the juiciness of the chicken just wasn't the same as visiting the real shops that sell these rolls.

I've made these before but I knew I had to master the art of making these to suit my taste buds i.e perfect blend of masalas for the marinade and just the correct amount of lemon and "lonka" (green chillies). After two trial rounds, I believe I have finally got them to a perfection for my husband and myself and now I feel confident to share the recipe widely if you are interested and write in to me :)


It took me all of 30 minutes (yes, that's true!)to complete these rolls and serve them piping hot. This was after a 10 hour work day and apartment viewings, so trust me when I say chicken dishes (especially boneless ones) are the easiest to choose to cook on a weekday.


One roll each was good enough for the two of us. The most exciting part of making these at home is that you're in full control of the quantity of chicken you add (I am extra generous with my portions as you can see from the picture above).
